To make the parchment pouches place the fish fillet in the large square of parchment paper add the cut veggies around it add the slices of lemon on top of the fish then drizzle with about 1 tbsp of olive oil and season everything with a bit more salt and pepper.

Place the fish on one side of four 12- to 15-inch lengths of parchment. Heat oven to 400 F. Cut open packets and top with fresh pea shoots chopped green onion and lemon zest.
Cut the paper 3-4 longer than the steak and 2½ times the width. Next fold each side of the parchment paper over wrapping it like a present. Fold the parchment over the fish and asparagus crimping edges to create a sealed packet.
Top with thyme and orange slices. Step 2 Season the fish with ½ teaspoon salt and ¼ teaspoon pepper. Bake 12-14 min or until fish is cooked through a toothpick poked through the parchment will slide through the fish easily.
Cut the paper 3 4 longer than the steak and 2 12 times the width.
