Deliciously sweet acorn squash is roasted with a good coating of brown sugar and salted butter. Prick all over the insides of the squash halves with a fork brush with butter and sprinkle with brown sugar.

The squash is cut in half and scooped of its seeds. Place squash halves cut sides-up into a large microwave-safe dish. Step 3 Place squash halves cut side down in the baking dish and bake.
In a small bowl combine brown sugar cinnamon and small pinch of salt.
