Put the pork on a rack in a roasting pan and place in the oven. Preheat the oven to 220C Heat about 1 cm of vegetable oil in a large flame proof heavy-based roasting tray over medium-high heat.
Standard advice here in the UK is to cook food until it has reached 70C and stayed at that temperature for 2 minutes.
